Strawberry Sunshine Pops


Summer is a time for holidays, swimming, hot days and cool treats...these frozen pops are not only healthy and refreshing but they taste great too! Let's face it, no parent really wants the hair raising chore of dealing with children hopped up on sugary snacks!

You will need a banana, fresh or frozen strawberries and cranberries, plain, unsweetened Greek yogurt (or your favourite kind), liquid honey, orange juice, a blender and popsicle molds.

In a blender, put in 1 peeled banana and a handful of strawberries...about 12 should be good,

...about 1/4 cup of cranberries,

...a heaping 1/2 cup of yogurt,

...a couple tbsps. of liquid honey...I just eyeball the amount...

...and a 1/4 cup of orange juice...I really should look into getting my nails done!

Then mix'er all up in a blender until smooth!

Pour into popsicle molds...then, if you have gone on a decluttering rampage and thrown out the plastic sticks for them, cover the mold with plastic wrap, secure with an elastic band and poke tiny holes through the wrap to support wooden sticks.

Put in the freezer for several hours or overnight...

Remove from freezer and run under hot water until popsicles loosen from the mold.

...and just like that...a healthy, cool treat to send outside with the kids when they say "I'm booored!" :)

Strawberry Sunshine Pops

1 banana

about 12 strawberries, fresh or frozen

1/4 cup fresh or frozen cranberries

heaping 1/2 cup of plain Greek yogurt

about 2 tbsps. liquid honey

1/4 cup orange juice

1. Mix everything in a blender until smooth, pour into popsicle molds and freeze for several hours or overnight.

2. Remove from freezer, run under hot water to loosen pops from the mold and serve!

* Makes 6 pops...mine only made 4 because I couldn't wait and drank the rest!
