Weeknight Naan Bread Pizza


Since I work full time, a quick meal on the table is always quite welcome and sometimes necessary, depending on the severity of my hunger pangs!

I remember my Mom would slump down in a chair after work and exclaim that she sometimes hated food...I realize now what she meant...she hated the thought of coming up with different ideas for supper after she had worked all day!

I came up with a great idea that would solve all of that...I would hire a personal chef!! James wasn't keen...why not, he already has a personal chef...ME!!

These naan bread pizzas are quick, easy and everyone can personalize their own.

Start with store bought naan bread (or homemade...if that's the route you're taking)...I used garlic naan bread this time....just to be jazzy!

Place naan bread "pizza" shells on a large baking sheet covered in parchment paper and preheat your oven to 425 degrees...brush tops with olive oil...

...then spread your favourite pizza or pasta sauce on top of shells.

Cut up the vegetables or whatever toppings you want on your pizza and grate mozzarella cheese.

Toss the shredded cheese on top (I use good quality mozzarella for this...I know you are thinking "well, la-dee-da!", but it really makes a difference when you use the stretchy, pizza cheese, such as "TreStella"...so there!

Then layer your toppings on top of the cheese...I used black olives, green onions, mushrooms, green pepper, sliced tomatoes, marinated artichoke hearts and, missing from the photo, feta cheese...I'm a high maintenance pizza girl!

I made a pepperoni and cheese one for Isabel on a pita (because she is a low maintenance girl that has not come into her gourmet taste buds yet)...and a "whatever you put on mine" pizza for James...because he doesn't want to rock the boat with his personal chef!

Bake in the preheated, 425 degree oven...

...for about 15-20 minutes or until golden brown, watching that you don't burn the edges like I did on mine!

Simple, yet delicious...overcooked edges and all!

Weeknight Naan Bread Pizzas

Naan bread shells

olive oil (for brushing over top of bread, optional)

pizza/pasta sauce

mozzarella cheese (good quality mozzarella is best, such as "Tre Stella")

pizza toppings of your choice

1. Preheat your oven to 425 degree.

2. Line a large baking sheet with parchment paper and place naan bread rounds on the sheet.

3. Brush the naan bread tops with olive oil and spread pizza sauce over the top.

4. Layer on the cheese and vegetables or other topping...Bake in your preheated oven for 15-20 minutes or until cheese is golden brown.
