Iced Mochas


The other day, I had a hankerin' for a cold, thick, creamy iced coffee but didn't really feel like driving anywhere to get one...so, I made my own...or two! Who needs coffee shops?!

First, you will need some instant coffee...I used espresso. This one seemed to pack quite the caffeine punch, so if you decide to drink both mochas yourself, be prepared for a touch of the insomnia! On a good note, my house got a 2am cleaning at warp speed!!

In a cup, measure 4 tsp's. of instant coffee powder,

1 tbsp., plus 1 tsp. of unsweetened cocoa powder and 2 1/2 tbsps. of granulated sugar.

Add 2 1/2 tbsps. of boiling water and stir until smooth.

Pour coffee/sugar mixture into a blender and add 1/2 cup of milk and 1/2 cup of heavy cream (you can use straight milk if you are concerned about the fat content but that never crosses my mind until I try to stuff myself into jeans that fit the day before!!)

Next, add about 2 heaping cups of ice cubes...

Using the ice crush setting on your blender, grind the mixture up until it is fairly smooth...

It should look like this...

Pour into 2 glasses and top with whipped cream...

...then garnish with cocoa powder for that "Highfalutin Coffee Shop" look!

Stick a straw in, put your feet up and enjoy!

Iced Mochas

4 tsps.instant coffee powder

1 tbsp. plus 1 tsp. unsweetened cocoa powder

2 1/2 tbsps. granulated sugar

2 1/2 tbsps. boiling water

1/2 cup milk

1/2 cup heavy cream

2 heaping cups of ice

whipped cream and cocoa powder for garnish

1. In a cup, combine the instant coffee, cocoa powder, sugar and boiling water...stir until smooth.

2. Pour mixture into a blender and add the milk, cream and ice. Blend until fairly smooth.

3. Pour into 2 glasses, top with whipped cream and garnish with cocoa powder.

* Makes 2 medium sized glasses...if you're opting to not be a glutton and drink only one, pour the rest in an ice cube tray, freeze and toss into the blender for a quick treat at your convenience!
