Homemade Meat Marinade

If you are still firing up your grills, holding onto the last fleeting moments of summer, you might want to try this marinade for your next BBQ! I am a wee bit of a carnivore and love to use this on a variety of meats all year round but my personal favourite would have to be steak marinated in this sauce for hours then grilled to medium rare perfection...I think I might have been a wolf in another life!

To make this marinade, you will need some white wine vinegar, olive oil, grainy dijon mustard, ketchup, white pepper (or you can use black), fresh garlic cloves, worcestershire sauce, brown sugar, a fresh lemon and missing from the photo, soy sauce....(this will marinate about 8 small steaks but I was only cooking for the 3 of us and these 2 steaks were all I had!)

In a medium bowl combine 1 cup of olive oil, a 1/4 cup of white wine vinegar, the juice of 1 fresh lemon (about 3 tbsp.'s)...

...a 1/4 cup of grainy dijon mustard,

...2 tbsp.'s of worcestershire sauce, 3 tsp.'s of brown sugar...

...a 1/2 tsp. of ground white or black pepper,

...a 1/4 cup of ketchup,

...and a 1/4 cup of soy sauce.

Next, mince 2 or 3 cloves of garlic and toss them into the marinade.

Give it a stir to combine ingredients...

...then pour marinade into a large ziploc bag.

Put steaks into the bag and flip it over a couple times to evenly coat the meat. Place bag onto a tray just in case the bag springs a leak and makes a mess (oily marinade everywhere = swear words flowing freely from your mouth!). Place tray in the fridge for a few hours or overnight, turning bag over often.

When you are ready to grill, remove steaks from bag and discard used marinade.

Cook steaks according to your taste. We use charcoal on an old open flame grill that James and his brother welded up years ago...this puppy has been around the block but man, nothing compares to the taste of charcoal grilled meat!

I think the blurriness of this photo is the result of shaky hands due to severe hunger pangs and the anticipation of sinking my wolf teeth into this t-bone steak!

...and there ya have it...tender, juicy steak full of flavour thanks to this easy, versatile marinade! Excellent for BBQ, baked or broiled meat and adds tons of flavour to pork, chicken and wild game meat too...enjoy!

Homemade Meat Marinade

juice of 1 lemon (about 3 tbsp.'s)

1 cup of olive oil

1/4 cup of white wine vinegar

1/4 cup of grainy dijon mustard

1/4 cup of ketchup

1/4 cup of soy sauce

3 tsp.'s of brown sugar

1/2 tsp. of ground white (or black) pepper

2 tbsp.'s of worcestershire sauce

2 or 3 cloves of garlic, minced

steak or meat of your choice (makes enough for 8 small steaks)

1. Combine all ingredients in a medium bowl and whisk to combine.

2. Pour marinade into a large ziploc bag and add meat.

3. Place bag onto a tray and place in the fridge for several hours or overnight...turn bag often to ensure meat gets evenly coated.

4. Remove meat from bag, discard marinade and cook meat as desired.

* Makes enough for 8 small steaks or you can easily cut recipe in half.
