Fresh Berries with White Chocolate Sauce

 I don't know about you, but after the Thanksgiving feast(s), the heavier autumn desserts and the hundreds of Halloween chocolate bars that I have consumed, I'm kinda craving some fruit! I don't think I need to point out the fact that my fruit is also smothered in a creamy white chocolate sauce but the point is, at least it's fruit! Ha!

 This light dessert is really quick and easy to make and a perfect ending to a comforting fall meal!

 Often you will find berries on sale at the grocery store this time of year, so scoop them up next time you are shopping, since you will need fresh strawberries, raspberries and blueberries for this recipe...you will also need, white chocolate chips, heavy cream (35%) and 1 vanilla bean (or vanilla extract).

 In a small saucepan, over medium/low heat, add 1 cup of heavy cream (35%)...

 ...next, split 1 vanilla bean in half and scrape the seeds from both halves of the pod (for the love of God, watch your fingers splitting that little sucker in half...ask me how I know this...swear words were involved!!)...add the vanilla bean seeds to the cream and continue to heat until the cream begins to bubble, watching closely that the cream does not scorch.

 Turn off heat and add 1, 1/3 cups of white chocolate chips to the hot cream, 

 ...let the chips sit for a minute to soften, then stir until the white chocolate melts and sauce is smooth and creamy. 

 Transfer sauce to a small serving pitcher...

 ...and pour warm sauce over fresh berries! The sauce will be somewhat thin when warm but will thicken as it cools...enjoy!

 

 

 

 

Fresh Berries with White Chocolate Sauce

 

Fresh berries of your choice...washed and left to dry on paper towels

1 cup of heavy cream (35%)

1 &1/3 cups of white chocolate chips or chopped white chocolate...(I found that the baking chocolate  squares seemed to clump when I tried to melt them into the cream...I'm sure a better quality white chocolate, such as "Lindt" would melt nicely though.)

1 vanilla bean, split in half and the seeds removed to add to the cream or 2 tsp's of vanilla extract

 

1. In a small saucepan, heat the cream and the vanilla seeds over med/low heat until cream starts to bubble...turn off heat and add the white chocolate chips.

 

2. Let the chips soften in the hot cream for a bit then stir until chips have completely melted and sauce is smooth.

 

3.  Serve warm over fresh berries!

 

* makes 1 & 2/3 cups of sauce

 

* sauce will be fairly thin while warm but will thicken somewhat when cool
