Chewy Chocolate Chip Cookies


The other night, I was reading a story with my daughter and when we got to the part where one of the characters was eating cookies, I had an overwhelming craving for a warm, chewy, melty , chocolate chip cookie!

I know you're thinking that yearning for a cartoon cookie is a little odd and that "melty" isn't a word but what is "normal" anyway?...and besides, who doesn't like warm chocolate chip cookies straight out of the oven, cartoon or not?! These cookies are crisp around the edges and soft in the centre...just perfect with a glass of cold milk!

Preheat your oven to 375 degrees, then you will need 3/4 cup plus 2 tablespoons of unsalted butter, cut into chunks.

melt the butter in a frying pan...

until golden brown, swirling it around occasionally to prevent burning,

Transfer the browned butter to a large size mixing bowl and add in 3/4 of dark brown sugar...you can use light brown sugar as well but the dark adds a butterscotchy flavour to the cookies! First "melty" then "butterscotchy"...my high school English teacher would be aghast!!

Next, add 1/2 cup of granulated sugar

...add 1 tsp. salt and 2 tsps. of vanilla...whisk mixture thoroughly.

Then, you will need 1 whole egg plus 1 egg yolk..add to the sugar mixture

...whisk for about 3 minutes,

...until mixture looks creamy and has lightened in colour.

In a separate bowl, combine 1 3/4 cups of all purpose flour and 1/2 tsp. baking soda... blend with a fork making sure all of the baking soda lumps are incorporated into the flour (I know this because I pulled that stunt making muffins and my boss was the lucky guy to bite into a baking soda lump!)

Using a spatula or wooden spoon, fold the flour/baking soda into the butter/sugar mixture, until all is combined.

Toss in 1 package of semi sweet chocolate chips, reserving a handful to place on top of dough mounds

Fold the chocolate chips in and eat some of the dough, trying not to think of your Mom's warning of "you're gonna get worms if you keep eating raw dough!!"

Scoop or spoon out mounds of dough and place them about 1 1/2 inches apart on parchment lined baking sheets ( I used stoneware pans which do not require parchment)

Place a few of the reserved chocolate chips on top of the dough mounds...this step is optional but if you want to run with the big dogs and have professional looking cookies, ya gotta pull it together and chip your dough balls!...or, if you don't care and just wanna eat 'em, that's okay too!

Bake in a pre-heated, 375 degrees oven for about 10-14 minutes or until the edges are golden and the centre of cookie looks soft and slightly underbaked (they will continue to cook and firm up after they have been removed from the oven)...remove from the oven and let cool on baking sheets for a few minutes before transferring to cooling racks. Best eaten warm with a cold glass of milk...warning...you may feel a little under the weather if eaten in large quantities...all at once...but I still haven't learned from that!

Chewy Chocolate Chip Cookies

3/4 cup, plus 2 tbsps. unsalted butter, cut into chunks

3/4 cup dark brown sugar

1/2 cup white sugar

1 tsp. salt

2 tsps. vanilla

1 whole egg, plus 1 yolk

1 3/4 cups all purpose flour

1/2 tsp. baking soda (not baking powder)

1 package semi sweet chocolate chips

1. Melt butter in a frying pan, swirling occasionally until golden brown.

2. Transfer butter to a large mixing bowl and add the brown and white sugar, salt and vanilla...stirring until fully combined.

3. Next add the whole egg and yolk, whisking mixture for about 3 minutes or until the batter becomes light and somewhat fluffy.

4. In a separate bowl, combine flour and soda...fold into batter until all flour is combined.

5. Scoop out balls of dough (2 tbsps each) and place 1 1/2 inches apart on baking sheets.

6. Bake in a preheated 375 degree oven for approx. 10-14 minutes.

7. Remove from oven and cool on baking sheets for a few minutes then transfer to cooling racks!
