The lettuce in our garden is out of control, it's coming on like a chia pet and it just doesn't stop...so salads every night for dinner it is! I definitely can't complain because every off season, I am yearning for fresh plucked produce when imported vegetables taste like plastic..and besides, who doesn't love a fresh summery salad, especially when that salad is loaded with crunchy, homemade croutons?!
These potato wedges sprinkled with herbs and roasted in the oven, are such a cinch to whip up that you will wonder why you don't make them more often...unless you are a carb watcher and wouldn't be caught dead with potatoes in your house OR, you already do make them often and are thinking "listen lady, I've been making these since you were knee high to a grasshopper!!"...either way, this is my version and they are good,...
In my last post, I whined about having the flu and since I feel better, I seem to have my appetite back...and I was craving french fries...so, I hopped to it and made us some! Have I mentioned that I love food?!
On the rare occasion that I make french fries, I like to use russet potatoes, salt and either peanut oil or lard...not artery friendly, but delish!
Tonight I made this Fresh Chopped Salad for supper with a grainy dijon, balsamic dressing...not only was it crunchy, fresh and full of flavour but it was just what I needed because I have gained ten pounds over the last few months...okay fifteen...okay, I don't own a scale but when I got head rush bending over, I thought I had better pull up on the reins a bit and make a salad!
