Super Easy Chocolate Dipped Marshmallows

Some people claim that Valentine's Day is just a made up "Hallmark" holiday...a cash cow, if you will, that annually rakes in millions from starry eyed teenagers, "in the doghouse" husbands or even couples that "still got it" after all those years! I say that they are just being "Debbie Downers" cause if you think about it...it's also another excuse to eat chocolate!!

These chocolate dipped marshmallows are so quick and easy to make, it might force you to whip up a batch at 10 pm one night because you are too lazy to drive into town to get that chocolate bar you are craving...and let me tell you, they hit the spot that particular evening!! Easy, delicious and a real savings on fuel too!

First, in the top portion of a double boiler, add 1 tbsp. of shortening (such as "Crisco")...

...and 2 cups of milk chocolate chips. Place the top part of your double boiler over the bottom pan of boiling water and let chips melt along with the shortening...you can also melt the chocolate chips and shortening in the microwave for 2 minutes.

Stir chocolate until smooth and satiny...

...and toss large marshmallows into the chocolate.

Coat the marshmallows evenly with chocolate and let the excess drip off back into the pot...

Set dipped marshmallows onto a parchment paper lined baking sheet...

...and repeat steps until all marshmallows are dipped. Put pan in the fridge until chocolate has set.

Store chocolate marshmallows in an airtight container in the fridge...that is if they make it that far!

...and there you have it, a simple treat for your sweet!
