Since there are only a couple weekends left in the summer, now is the time to kick up your heels and have a "shindig" to squeeze in every last bit of fun that you can! This guacamole dip is full of tasty goodness and sure to please your peeps...if they like guacamole that is...if not, I may have ruined your party!
You will need 2 ripe avocados, 2 cloves of garlic, a small bunch of fresh cilantro, 2 limes, salsa, sour cream (I didn't have sour cream, so I used plain Greek yogurt instead...turned out great), salt and green chilies (this is optional if you have kids that will actually attempt guacamole...you don't want to burn their little tongues off!),
First, cut the avocados in half and scoop out the inside with a spoon...
...pop the seed out of the other half with your spoon and continue scooping the rest of the avocados into a medium size bowl.
Using a fork, mash it all up until fairly smooth and creamy...
Next, mince the cloves of garlic (use more than 2 if you like...it's your breath! :)
...chop the fresh cilantro...about 3 tbsps.
...and toss it into the mashed avocado...add 1/2 tsp. of salt and if you are using the chopped green chilies, toss 'em in too!
Stir it all up then squeeze the juice of 1 1/2 to 2 limes into your mixture (you may want to squeeze the juice into a bowl first, so you can strain out the seeds...I was just showing off for the camera here!)
Next, add about 3 tbsps. of salsa and 1/4 cup of sour cream or plain Greek yogurt.
Stir it all together until all ingredients are evenly incorporated throughout the dip...
Garnish with a sprig of cilantro, a wedge of tomato and scatter tortilla chips around the counter like you are expecting a Food Network scout to your festivities!
...or just dig in and party like it's 1999! Whoo-hoo!!...sorry, don't know what came over me there!
2 ripe avocados
a small bunch of cilantro (about 3 tbsps. chopped)
2 cloves of garlic, minced (more if you wish)
1/4 cup sour cream or plain Greek yogurt
3 tbsps. salsa
chopped green chilies (optional)
Cut the avocados in half, scoop out the insides and put into a medium size bowl. Mash with a fork until creamy. Chop the garlic, cilantro and chilies (if you are using) and add to the mashed avocado. Next, add the lime juice, salt, sour cream or yogurt and salsa, then stir it all up until combined. Cover with plastic wrap and store in the fridge for a few hours or until the flavours have blended together. Serve with tortilla chips or pita wedges...enjoy!
Guacamole lasts in the fridge for a day or two but will start to go brown..best eaten as soon as possible!
